A popular locally-owned brand is spreading its wings into new territory as Duluth's own Chilly Billy's Frozen Yogurt just opened in a brand new location with much more than just sweet frozen treats on the menu.

Founded in 2011 by "Chilly" Bill Marker, Chilly Billy's has grown from one location to two in the Twin Ports area, with a lot more on the horizon as new ownership has taken over. Bill announced his retirement in 2023, and a pair of businessmen in the Duluth area stepped in to buy the shops last fall.

While the new owners really want to preserve what made Chilly Billy's so popular in the first place for Norhtlanders, Adam and Andrew (the new owners) have their eyes on growth and exciting new things.

The biggest of those new things so far is the move of their Woodland Avenue shop from the Bluestone shopping area down the street to the old Vanilla Bean location in the Mount Royal Center.

With this move, a lot of new opportunities presented themselves. In checking out the new location, which held its grand opening on March 29, I learned a lot more about what's in store at the all-new Chilly Billy's.

The frozen yogurt and toppings bar you know and love are still available, but there's plenty more. Besides a physically new space that is larger than their old location, the most notable addition is a brunch menu, which features unique takes on breakfast classics along with salads, soups, and other fare.

Amayah Littlewolf-Daoust, the general manager for the new Chilly Billy's, was deeply involved in the creation of the new menu. She's enjoyed getting positive feedback from customers on her creations, which feature something for everyone.

Two of the biggest banner breakfast items are their "top-your-own" pancakes and Dutch waffles. This gives you the chance to use the ala carte toppings you're used to with their frozen yogurt to dress up your pancakes or waffles.

The menu goes way beyond that, however. Amayah said that while she's quite proud of the whole menu, a few items stand out in her mind.

Amayah highlighted a few items from the menu as things she's particularly proud of, noting their açaí bowls, their breakfast scrambles, and the top-your-own Dutch waffles, but there are two favorites she is most proud of on the menu.

One of them is the matcha pancakes, which she admits sounds kind of weird at first, but is a delicious creation. She explained it was kind of a fun experiment that they decided to add to the menu, and a lot of customers have given great feedback about the unique take on a breakfast classic.

The other top item in the general manager's opinion on the menu is their breakfast burrito. When you order this, you get your choice of protein to go along with scrambled eggs, homemade pineapple salsa, and cotija cheese with a side of hash browns, fruit, or breakfast potatoes.

While the protein options for the burrito include bacon, ham, and pork or chicken sausage, the one Amayah recommends is their gochujang honey bacon. The Korean-inspired hot honey adds a lot of flavor to the burrito that comes highly recommended.

Local partnerships with companies like Mike & Jen's Hot Cocoa and Chacho's Tacos for their hot sauce are part of the Chilly Billy's business. Here's a look at one of their menu items, showing off one of those partnerships.

While there are several great options on their current menu, they do say there are plans to continue to grow the menu. This could include some seasonal dishes and other items that will be added as they continue to settle into their new space.

The new space is allowing Chilly Billy's to expand beyond their frozen yogurt offerings and new brunch menu, with a lot more in store.

One of the central goals the owners have for the new Chilly Billy's location is to make it a community gathering space for activities and fun. Ideas like themed trivia nights, cribbage tournaments, board game nights, and more are all in the plans to give groups of friends and families (even with younger kids) places to go for evening activities as an alternative to venues like bars and breweries.

One of the first evening activities on the calendar is a trivia night on April 9, starting at 7 pm. The goal with most of these events is to include all ages, which is certainly the case for their trivia night next week.

While the owners want this to be a family-friendly space, that doesn't mean alcohol won't be available. To start, they will offer 6 taps that will feature local beers as well as a root beer option for the kids and anyone who just loves root beer. They also plan to offer cocktails and mocktails as they continue to settle in.
