Duluth has a ton of food options, but not a lot when it comes to a vegan lifestyle. One Duluthian would like to change that by bringing a vegan food truck to Duluth. 

Kelsey Martindale started this campaign to bring vegan style food to the area. Since becoming a vegan, she said it has changed her life mentally, physically, and spiritually. She's taking a chance on her dream in hopes on sharing her new lifestyle with others to enjoy and experiance.

All the donations would go to purchase the food truck and help get this dream off the ground.  Her goal is a just a third of the total cost of what she needs. While she has a menu in mind like hummus with veggies bowl, fresh fruit
bowls, smoothies, and toasted sandwiches, she is also looking for suggestions from others.

According to about.com, Veganism is the practice of minimizing harm to all animal, and some even call it a moral baseline for animal rights activists. Vegans also eat plant-based foods, such as grains, beans, vegetables, fruits, and nuts.

My cousin went vegan for a little bit, and the food is pretty good. For some reason vegan lifestyle gets a bad rep. I would totally try out a vegan food truck if it was an option. Let me know in the comments below what you think of a vegan food truck in Duluth.
