Being a father of a toddler, I'm always looking for ways to get her involved with cooking and other fun things around the house. Over the weekend we tackled a delicious Italian dessert, the cannoli.

Zoey always loves helping out whether it's helping change the diaper of her new baby sister or coming with ideas for what to eat. For dinner she wanted to do homemade pizzas and I thought cannolis would be the perfect companion.

Ian & Zoey's Easy Cannolis Recipe:

We took 15 oz. whole ricotta cheese and drained it overnight on paper towels in a colander with a bowl underneath it.

The next day, take:

1 container of marscapone

1 cup (or desired to taste) powdered sugar

1 teaspoon of vanilla extract

and 1 cup of mini chocolate chips

mix all of the above (don't forget about the ricotta cheese) in to a bowl and put then put the mixture in a ziploc bag to sit in the fridge to set.

Next, take a box of sugar ice cream cones and pour magic shell chocolate all over the inside.

After the mixture has set (we waited a hour), cut a hole in the corner of the bag and pour into the cones. Serve and enjoy!
