My wife used to own a restaurant and I'm chubby, so when I say we like to eat, I mean it.  For us though, it's all about flavor, and trying things that are different from what we would normally have.  We look for great flavors, and also a great experience when we dine out, especially on vacation.

On our way back from the House on the Rock and staying at a hotel with themed rooms for our anniversary, we needed a late breakfast.  We skipped several joints on our travels back to Superior, Wisconsin because I frankly didn't notice them.  Then traveling through the town of Hillsboro, something caught my eye.

On the main drag through town, I saw "Breakfast, Lunch, Dinner" on a sign.  We pulled over and looking closer noticed it featured Nicaraguan Cuisine.  Nicaraguan cooking is something we don't really have in the Twin Ports, so we had to give it a try.

The place was incredibly clean, the staff was extra friendly, and our breakfast options arrived at our table in no time.

I opted for the Huevos Rancheros with a cup of Nicaraguan Coffee, and my wife went with one of their omelets that had sweet plantains.  The flavors were incredible and even though it's about four hours from home, we decided almost immediately we would be stopping back there again.

Because of how impressed we were, we had to try dessert and shared their Arroz con Leche.  It's a rice pudding cooked in milk with sugar, cinnamon, and vanilla.  It was so good; I wish I could have filled my motorcycle saddle bag with it to take home.

If you make your way anywhere near Hillsboro, Wisconsin make sure you make a stop at La Marimba Nicaraguan Cuisine for some great food.
