I do enjoy using my Masterbuilt Electric Smoker, and smoked pulled pork is quite delicious, but sometimes the ease of using a crockpot is nice too.

For my parent's 40th anniversary party, my wife made crockpot pulled pork that was quite delicious, and for her upcoming birthday, she is making it again.  She's a phenomenal cook well beyond just using a crockpot, but for the amount of people coming to the party, it's the simple way to go.

For this recipe you'll need pork shoulder or pork butt roast at 3-4 pounds, and you can assume that 1 pound will feed about 3 people depending on what you offer for sides.  Boneless is easier but most supermarkets or butcher shops already have the bone-in options cut well so the bone will come out easily.  The other bonus to the crockpot is the bone is easy to remove after it's cooked down a bit.

Spices

To amp up the flavor in this recipe, she uses a mixture of 1 tsp black pepper and 1/2 tsp ground red pepper, 1 tsp salt, 1 tsp paprika, and 1 tsp ground cumin.

Green bell pepper

You'll only need one and it should be sliced into thin strips and is optional, but I suggest you include them.

Yellow onion

I'm sure other varieties would work but yellow is simple as we usually have them on hand.  Slice one onion incredibly thin.

BBQ sauce

You can of course make your own, but whatever kind you and the family prefer works just fine.  We grab an 18-ounce bottle of Sweet Baby Ray's Original Barbecue Sauce and usually roll with that.

Brown sugar

The lighter version of brown sugar is preferred and adds some nice sweetness to the flavor profile.  Use half a cup.

Putting it all together and getting it rolling is a breeze.  Just trim excess fat from the pork cut, then combine the spices and rub all over that roast.  Toss the bell pepper and onion in the crockpot and put the pork on top.  Mix the barbecue sauce you decide on with the brown sugar and pour it over the pork.  Then put the lid on the pot, set it for low, and cook it for 8-10 hours while trying not to drool over the delicious smells filling the air.

When the time is up, pull the pork out, place it on a cutting board and trim away larger pieces of fat that remain.  Next you pull the pork apart which is easily done with two forks and serve as you please.  We make sammiches with it or serve it as-is on a plate with whatever sides we prefer.  My wife also uses the remaining juices in the crockpot as a sauce to juice it up if anyone likes it extra sloppy.  As a bonus, try adding either some sweet or spicy pickles to the top when serving to really take it to the next level.
