Duluth’s Newest Mexican Restaurant, Sabor By Pedro’s, Is Open! Here’s What To Expect There

The wait is finally over! Sabor by Pedro's has opened in Duluth's Woodland neighborhood!

Here's a look at the road to getting here, what's on the menu, what it looks like inside, and a review of the food and dining experience.

The road to opening Sabor by Pedro's

Back in December, we learned that popular Cloquet Mexican restaurant Pedro's was planning to expand into Duluth. After opening a Pedro's location in Superior, the owners decided they wanted to try something a little different with their Duluth restaurant.

The owners of Pedro's expressed plans to open Sabor by Pedro's, a different twist on the popular restaurant that has grown for years in Cloquet, expanding to Superior.

Sabor would make its home in the Mount Royal Market area, where Madhouse Burgers had previously operated, which is also where Chilly Billy's and Vanilla Bean had also made a home over the last number of years.

Much of the remodeling had been completed by the end of March, but owners admitted in early May that they "had some hiccups and lots of bumps along this road during this process of opening the restaurant", after initial hopes of being open sooner.

After smoothing out those bumps, the final thing keeping them from opening was getting their liquor license. They were just recently granted that liquor license, allowing them to hold a soft opening yesterday (Sunday, June 7) afternoon and evening.

What's on the menu at Sabor by Pedro's?

The menu is very much inspired by favorites from the original Pedro's in Cloquet. The chips and salsa are the same level of delicious, and yes, they do have their famous queso!

One of the notable menu offerings are some brunch items, which include things like huevos rancheros, chorizo biscuits and gravy, and the "burrito bien" breakfast burrito, among other items.

Along with their brunch offerings, you'll find tacos, burritos, enchiladas, and a number of other Mexican dishes.

What about the drinks on the menu?

Just as Pedro's has been getting ready to open Sabor, they have been teasing soft-serve margaritas not only for this new restaurant, but also for their Cloquet and Superior locations. That's what is pictured above. I'll review that in a second.

Other alcohol offerings include traditional "on the rocks" and blended margaritas, spicy margaritas, daiquiris, a variety of cervezas (beers), and some other tequila beverages with bold fruit flavors like the Sabor's Paloma and Luna Roja.

So, how are the food and beverages at Sabor by Pedro's?

For my visit on their soft opening day, I decided to get the strawberry soft serve margarita and carne asada tacos. Meals come, of course, with complimentary chips and salsa.

As I mentioned before, the chips and salsa are great. They're just what you'd expect from Pedro's at their Cloquet or Superior location.

The carne asada tacos were phenomenal. The steak was tender and perfectly seasoned, and you get your choice of corn or flour tortillas. They are served with onions, cilantro, rice, beans, and a special taco salsa/sauce that you get with some other tacos at Pedro's. If you are trying this for the first time, tread carefully, it is sneaky spicy, but it is still quite good if you enjoy a little heat! All told, my entree was awesome, and right in line with what I'd expect from the offerings of Pedro's.

Last, but not least, the soft serve margarita was a fun addition. The flavors available were strawberry and lime (I chose strawberry), but it also looked like some people were ordering a mix of the two, which could be interesting. While the name "soft serve" might make you think it is ice cream, it isn't quite.

It has the same creamy, smooth texture, but it reminded me texture-wise of the soft serve beer at the state fair last year, which doesn't include any dairy, but seems like ice cream. The flavor is good, the texture is a fun change-up from a traditional margarita, and yes, it does include tequila. It also doesn't melt super fast, so you can savor the texture and fun of this novelty through your meal (or as a post-meal or standalone cocktail treat).

How's the environment at Sabor by Pedro's?

I think they did a fantastic job of transforming the space into a bright, welcoming spot that feels kind of like you're sitting at an upscale, casual tropical patio space. The decor is simple, but quite pleasant.

The staff was also awesome! For being their first night during a "soft opening" as they worked through their new equipment and helping their first customers, they did a great job. The whole crew was very friendly, and the service was super fast, even though they were pretty busy while I was there.

What are the hours and location for Sabor by Pedro's?

Sabor by Pedro's shared today (June 8) that they are officially open daily starting today!

Their hours are Sundays-Thursdays 11 am-9 pm, and Fridays & Saturdays 11 am-10 pm.

They do note that they are still learning their new order-taking system and do not currently have a phone line for online orders, so they do ask that you stop by to try the food in person, but be patient as the staff learns the new system.

Again, based on my experience yesterday, it was all pretty smooth! But just be patient in case a few bumps do pop up as the new staff learn all the finer details of the new equipment.
